Being a baker and a cake decorator, I have those moments where I am flooded with new ideas. I am always thinking of something new. Pinterest is my go to inspiration outlet, but I really believe it can be good and bad. It's all about originality! Make it your own, your design, your recipe! Here's a new creation that I've been wanting to share for a long time now and FINALLY WILL! Hooray! So, I hope you all enjoy and know how excited I am to share this all with you in my very first blog post. So, expect to see cake designs and new creations.
Cookies! Cookies! Cookies! Here's the breakdown of what Smackers are made up of. Two soft chocolate chip cookies smacked together with some sweet, fluffy Italian Meringue Vanilla Buttercream, dipped in chocolate and drizzled over with caramel. This dessert is definitely like having a sugar party in your mouth! Lucky for me my sister, Breana, came up with the name and thought, what a great idea for a name. The original name was "Smackerdoodles."

CHOCOLATE CHIP COOKIES
2 Cups All - Purpose Flour
1 Tsp. Baking Soda
1/2 Tsp. Salt
1 Cup Unsalted Butter, softened
1 Cup Granulated Sugar
3/4 Cup Brown Sugar
1 Tsp. Vanilla Paste or Extract
2 Cups Semi-Sweet Chocolate Chips
1 Preheat your oven to 350 degrees F.
2 In a separate bowl, mix flour, baking soda, and salt together. Whisk to aerate. Set aside.
3 Mix softened butter, granulated sugar, and brown sugar. Beat on high speed until light and fluffy. About 3-4 minutes.
4 Add vanilla and eggs, one at a time until incorporated.
5 Fold in chocolate chips.
6 Line cookie sheets with parchment paper. Use a small cookie scoop or tablespoon to scoop out cookie dough. Cookie dough should be at least 2" apart.
7 Bake for 7-8 minutes. Cool, and enjoy!
Yield: 2 dozen
